INSTRUCTIONS

GROUND CHICKEN

  • Heat a large skillet over medium heat and add olive oil. Once oil is heated, add the ground chicken, crumble and cook until browned.

  • Add water chestnuts to the skillet and saute for two minutes.

  • Pour the prepared sauce mixture into the skillet and mix well. Cook for two more minutes to allow the sauce to soak into the chicken and vegetables.

  • Remove from the heat and top with green onions and chopped peanuts.

Jasmine RICE

  • Add rice, water and salt into a medium pot and stir to combine.

  • Close the pot with a tight-fitting lid. Bring to a boil over medium heat then lower the heat to low and cook for 12 minutes.

  • Take the pot off the heat and leave the rice to rest for 10 minutes (with the lid on).

MEAL PREP

  • 4 oz of chicken and vegetable mixture

  • 4 lettuce wraps

  • 1 oz of peanuts

  • 3 oz of jasmine rice
